Aramark feeds people where they do not choose a restaurant: stadiums, universities, hospitals and workplaces.
The client outsources catering entirely: the contractor hires the cooks, buys the food and runs the kitchens. Contracts are long and renew almost automatically, because changing operator means replacing the entire canteen staff at once.
The economics depend on attendance: students on campus, spectators at a match, employees in the office. People returning to offices and rising event attendance work for the company, remote work against it. Food and labour costs rise faster than contract prices can be renegotiated. Risks: inflation and contract retention. The company spun its uniform business into a separate listed structure in order to concentrate on catering. A dividend is paid.
